Lemon + Garlic Mascarpone Filling
Serves 2-3
Ingredients:
1 pound mascarpone
~1 cup of fresh grated parmigiano reggiano
2 lemons, one zested & both juiced
1 large clove of garlic, grated or pureed
~4 pinches of salt
Directions:
Begin by combining the lemon juice and garlic puree. Let sit for upwards of 5 to 10 minutes. (You could begin making your sauce while the dough rests and the garlic mellows out in the lemon juice.)
Place the mascarpone in a large mixing bowl. Pour the lemon juice and garlic mixture on top of the mascarpone. Add lemon zest. Mix well. Salt to taste.
Transfer mascarpone filling into a piping bag (ziploc works in a pinch).
