Lemon + Garlic Mascarpone Filling

Serves 2-3

Ingredients:

  • 1 pound mascarpone

  • ~1 cup of fresh grated parmigiano reggiano

  • 2 lemons, one zested & both juiced

  • 1 large clove of garlic, grated or pureed

  • ~4 pinches of salt

Directions:

  • Begin by combining the lemon juice and garlic puree. Let sit for upwards of 5 to 10 minutes. (You could begin making your sauce while the dough rests and the garlic mellows out in the lemon juice.)

  • Place the mascarpone in a large mixing bowl. Pour the lemon juice and garlic mixture on top of the mascarpone. Add lemon zest. Mix well. Salt to taste.

  • Transfer mascarpone filling into a piping bag (ziploc works in a pinch).
