Parmesan Cream Sauce
Serves 2-3
Ingredients:
1-2 cups fresh grated parmigiano reggiano
2 cups heavy whipping cream
1 large clove of garlic, grated or pureed
~¼ tsp of white pepper
Salt
Directions:
Set a heavy-bottomed small saucepan over medium-high heat. Pour in the
cream. Add the garlic and white pepper. Whisk.
Allow the cream to heat up, whisking frequently so as to avoid scalding the
cream.
Once the cream reaches just over 175°, or when it’s hot but not quite simmering,
gradually whisk in the parmigiano.
Once the parmigiano is well-incorporated, take off the heat. Salt to taste and set
aside until ready for use.
