Parmesan Cream Sauce

Serves 2-3

Ingredients:

  • 1-2 cups fresh grated parmigiano reggiano

  • 2 cups heavy whipping cream

  • 1 large clove of garlic, grated or pureed

  • ~¼ tsp of white pepper

  • Salt

Directions:

  • Set a heavy-bottomed small saucepan over medium-high heat. Pour in the

    cream. Add the garlic and white pepper. Whisk.

  • Allow the cream to heat up, whisking frequently so as to avoid scalding the

    cream.

  • Once the cream reaches just over 175°, or when it’s hot but not quite simmering,

    gradually whisk in the parmigiano.

  • Once the parmigiano is well-incorporated, take off the heat. Salt to taste and set

    aside until ready for use.
